Classic pork kharcho soup with potatoes

Not so long ago I discovered a recipe for kharcho. There are an immense number of recipes on the Internet, but this one was my favorite. The classic pork kharcho soup with potatoes turns out to be hearty and very tasty.

Wash the pork thoroughly in running water. Cut into medium sized pieces.

Place the prepared meat in a deep saucepan with a thick bottom. Season with salt and add bay leaves. Fill with cold water. Put the saucepan over medium heat and bring to a boil, periodically removing the resulting foam with a slotted spoon. Then reduce the heat and cook the pork for 40-50 minutes.

Wash and peel the potatoes using a vegetable peeler and cut into medium cubes.

Peel the onions, rinse and cut into small cubes.

Peel the garlic, rinse. Rinse and dry cilantro and parsley, shaking off excess moisture. Chop the herbs and garlic with a sharp knife.

Wash the tomatoes, peel the stalks and peels, after pouring boiling water over them. Chop finely.

Rinse the required amount of rice thoroughly under running water several times.

Heat the pan well, add a little vegetable oil, put the chopped onions and fry until softened, stirring occasionally. Then add the cooked pork. Add the potatoes and rice to the boiling broth, bring to a boil, then reduce heat and cook for about 20 minutes.

Add chopped tomatoes and tomato paste to the pan. Stir, pour in a ladle of meat broth and simmer over minimum heat for 10 minutes.

Gently transfer the cooked pork roast to a saucepan with soup. Add black pepper, suneli hops, minced garlic and herbs.

Stir the kharcho thoroughly, bring to a boil. Then turn off the heat and let the dish infuse for 10 minutes.

In the classic recipe for kharcho soup, there are no potatoes in principle.
