I love kharcho very much, but it takes a lot of time to prepare a traditional dish. Therefore, I found a way out and simplified the recipe to a disgrace. Today I will share with you how I cook kharcho soup using chicken at home.

First of all, prepare all the necessary ingredients for making chicken kharcho.

Rinse the chicken fillet in running water, cut into small pieces.

Rinse the required amount of rice thoroughly under cold water several times.

Put the prepared chicken fillet in a deep saucepan. Fill with cold water. Put the saucepan over medium heat and bring to a boil, periodically removing the resulting foam with a slotted spoon or fine sieve. Add washed rice, season with salt, bring to a boil, then reduce heat and cook for about 20 minutes.

Wash and peel the carrots using a vegetable peeler. Cut the peeled carrots into large, free-form pieces.

Heat the pan well over high heat, add a small amount of vegetable oil, put the chopped carrots and fry until softened, stirring occasionally.

Rinse green onions in cool water, dry off excess moisture and chop with a sharp knife. Peel the garlic, rinse in water, and then chop with a sharp knife or pass through a press. Remove the fried carrots from the pan and add chopped green onions and garlic, and tomato paste on top. Stir well and fry a little.

Then add the fried carrots, green onions, garlic and tomato paste to the pan. Stir well and bring to a boil. Boil for 5-7 minutes.

At the end of cooking add salt, black pepper and kharcho seasoning. Add your favorite spices if desired. Remove from heat, cover and let the soup steep for 5-10 minutes.
