Diet sorrel soup

Sorrel soup is a great option for a first course during a diet or fasting period. This soup is low-fat, light, contains fiber, and saturates well. Despite the fact that there is no meat in the soup, it is quite rich - this is a "merit" of gentle sautéing vegetables and adding spices.

Pour water in the indicated volume into a saucepan and put it on the stove. Add salt and bring to a boil.

Peel potatoes and carrots, rinse and dry. Peel the onions and wash them as well. Cut the potatoes into small cubes, carrots into thin circles or small cubes. Chop the onion or cut it into thin slices - to taste.

We wash the sorrel thoroughly to remove dirt. Discard dry leaves and tough stems. Cut the prepared greens into strips. We wash the green onions, dry them and cut them into small pieces.

Dip potato pieces into boiling water and cook for ten minutes. While the potatoes are boiling, heat the vegetable oil in a frying pan and pour the chopped onions and carrots into it. Pass at low temperature until soft. This will take approximately ten to fifteen minutes.

Immerse the sautéed vegetables in a saucepan with already soft potatoes. Also add chopped sorrel and green onions. Add bay leaves, salt and black pepper to taste. Mix and remove from the stove.

Let the soup brew a little and cool. Pour it warm into portioned plates and serve. Optionally add sour cream and sprinkle with chopped herbs.
