Rinse the turkey pieces and place in a saucepan. Pour water into it and cook over medium heat. Peel and rinse the onions, celery and carrots. When the water boils, dip 1/2 onion, 1/3 carrots and celery into it. Boil the porcini mushrooms separately, and when they become soft, tip them into a colander. Let them cool slightly, then chop into strips. Send the mushrooms to the broth and simmer for 30 minutes on a low boil. Season the soup with salt, discard the onions and celery from the dish, and continue cooking over low heat.

Chop the rest of the fresh carrots into small strips. Half an onion - small cubes.
