Fresh porcini mushroom soup in chicken broth

Anyone who loves mushrooms will never give up a bowl of aromatic soup made from fresh porcini mushrooms in chicken broth. The first dish comes out with a bright and rich mushroom flavor. This soup will perfectly satisfy your hunger and warm you on a cold rainy evening.

The first step is to prepare all the necessary ingredients for the fresh porcini mushroom soup in chicken broth. I had chicken broth in the fridge. Place the pot with chicken stock over medium heat. In the meantime, wash the carrots thoroughly and peel them with a vegetable peeler. Peel the onions and rinse in cold water.

Prepare porcini mushrooms. Go through, clean and rinse them under running water. Cut large mushrooms into medium-sized pieces. I used commercial porcini mushrooms, they were already completely ready for use and did not require additional processing.

Bring the chicken stock to a boil and add the prepared porcini mushrooms. Season with salt and black pepper. After boiling again, reduce heat, cover and cook porcini mushrooms for about 30-35 minutes, periodically skimming off the foam and stirring occasionally.

Cut the peeled onions into small cubes.

Grate the peeled carrots on a coarse grater.

Wash the potatoes well and peel them with a vegetable peeler. Cut the peeled potatoes into medium-sized cubes.

Put prepared potatoes in a saucepan with mushrooms. Stir and cook for about 10-15 minutes, stirring occasionally.

Then add the chopped onions.

The next step is to send the grated carrots to the pan.

Lastly, add the bay leaf to the pot and cook the soup for another 10-15 minutes, covered. Then carefully remove the bay leaf and remove the pan from the heat.

Leave the pot with fresh porcini mushroom soup for about 10-15 minutes. Serve the finished infused soup in portions, garnishing with pre-washed and chopped herbs if desired.
