Fresh porcini mushroom soup with chicken

Soup lovers will definitely like and come in handy the recipe for a soup of fresh porcini mushrooms with chicken. The soup is rich and very aromatic. Such a first course will be appreciated even by those who are not very fond of soups. This soup is a frequent visitor in our family.

Wash the chicken, place in a deep saucepan, cover with cold water, put on medium heat and bring to a boil. Then reduce heat and simmer for about 20-25 minutes, periodically skimming off the resulting foam. Prepare porcini mushrooms. Go through, clean and rinse them under running water. Cut large mushrooms into medium-sized pieces.

I used store-bought porcini mushrooms, they were already completely prepared for use and did not require additional processing. Wash the potatoes well and peel them with a vegetable peeler. Cut the peeled potatoes into strips.

Wash the carrots thoroughly and peel them with a vegetable peeler. Grate the peeled carrots on a coarse grater or cut into strips, like potatoes. You can also use a Korean carrot grater.

Put prepared potatoes in a saucepan with chicken and bring to a boil. The method of cutting vegetables is not fundamental, everyone chooses a method that is convenient for themselves. I like cutting into strips, so, in my opinion, it turns out beautifully. But this will not affect the taste in any way.

Then place the prepared porcini mushrooms. After boiling again, reduce heat, cover and cook the soup for about 20-25 minutes, periodically skimming off the foam and stirring occasionally.

Then add the chopped carrots and cook the soup for another 15 minutes. Season with salt and black pepper to taste. Then add the pasta, for the soup it is best to use small vermicelli, but I suddenly ran out of it, and I used the spaghetti, having previously broken them into several pieces. Cook the soup for another 5 minutes.

Then remove the saucepan with the soup from fresh porcini mushrooms with chicken from the heat and leave to brew for about 10-15 minutes. Serve the finished infused soup in portions, garnish with sour cream and chopped herbs if desired. I used frozen dill.
