Soup with fresh mushrooms

Each housewife has a small amount of mushrooms in stock for preparing the first course, but the most delicious soup is made from fresh mushrooms. In this recipe, you are invited to cook soup with fresh mushrooms and without adding meat. The dish will appeal to those in need of a diet, a PP, and a fast.

Peel the potatoes, wash and cut into small cubes. Place it in a bowl and cover with cold water for 30 minutes. During this time, some of the starch will leave the potatoes, and the cubes will not lose their shape during cooking.

Wash fresh mushrooms, cut large mushrooms into pieces, transfer to a colander and place in boiling water for 5 minutes.

Pour water into a soup pot, put chopped potatoes and scalded mushrooms in it, and cook the soup over low heat until the potatoes are fully cooked.

Chop the peeled carrots on a coarse grater, fry in hot oil and transfer to the boiling soup.

Peel and chop the onion into small cubes.
