It is very convenient so that you can bake beets in advance: they are well stored in the refrigerator. Cooking borscht, salads and other dishes using beets can now be planned without reference to the fact that the root crop must first be baked and cooled. The finished beets will already be waiting in the fridge! Unpeeled, it can be stored in the refrigerator for up to a week.

For baking, we take medium-sized beets of about the same size so that the baking time is short and the same for each root vegetable. Thoroughly rinse the beets in water, dry them and prick them with a toothpick in several places - so baking will be more efficient and faster.

Cut off pieces of foil for each beet. Place the roots on the glossy side of the foil and squeeze lightly with your hands.

Water each beet with a little vegetable oil. The approximate amount is half a teaspoon for each root vegetable. Sprinkle with balsamic vinegar as well.

Then sprinkle the beets with coarse salt and wrap each one tightly.

We put the beets wrapped in foil in a suitable shape and send them to an oven preheated to 220 degrees to the middle level. We bake for forty to forty five minutes. If the beets are large, the baking time is likely to take longer. We check the readiness by piercing the roots with a thin knife: if the blade enters without resistance, then the vegetables can be taken out.

Unroll the finished beets from foil and let cool. We peel and use as directed. If you do not plan to use it right away, then cool the beets, wrap them in new clean foil and put them in the refrigerator in a container. We store for a week.
