Pickled beets for the winter without sterilization

Slightly sweet pickled beets will perfectly fit into salads like herring under a fur coat, and will also become the basis for preparing winter beetroot and borscht. The workpiece does not require sterilization, it is preserved thanks to the vinegar in the composition and prolonged heat treatment.

Sort the beets, peel and rinse. Grate the root vegetables on a Korean carrot grater or on a regular medium grater.

Put the prepared grated root vegetables in a saucepan with a thick bottom and walls. Pour in granulated sugar, salt, pour in water and acetic acid, vegetable oil. Stir everything well and bring to a boil.

Simmer the beetroot mass, stirring from time to time with a wooden spoon or spatula, over minimum heat for up to 1.5 hours.

Place the beets in sterilized glass jars, roll up or seal them tightly with screw caps. Wrap the seams in a blanket, turn over and wait until it cools completely. Store blanks in a cool, dark place.
