I want to share an unusual recipe for beets with beans for the winter. In order to prepare this appetizer, it is necessary to boil the beets and beans in advance. Vitamin salad turns out to be very tasty and nutritious. This salad is very popular in our family, and we prepare it every year. Try it too, I am sure you will like the result very much.

Wash the beets thoroughly and place in a heavy-bottomed saucepan, cover with cold water and put on medium heat, bring to a boil, then reduce heat, and cook the beets for about 1-1.5 hours, depending on their size and variety. Peel the boiled beets after cooling. Grate the peeled beets on a coarse grater.

Then place in a heavy-bottomed saucepan. Rinse the beans thoroughly, then place in a saucepan, cover with cold water, bring to a boil and cook for about 40-50 minutes over medium heat. Drain the boiled beans through a sieve or colander. Leave for a while to allow excess glass liquid.

Then add the boiled beans to the beets. Peel the onions or red onions, and then rinse in cold running water. Cut the peeled onion into thin half rings. And then add to the rest of the ingredients in a deep saucepan.

Transfer the chopped bell pepper to a container with the rest of the vegetables. Add the required amount of salt, granulated sugar and vegetable oil, put on medium heat and cook for about 40 minutes.

5 minutes before the snack is ready, pour in the required amount of table vinegar. Wash thoroughly in warm water and then sterilize in a water bath, microwave or oven. Pour boiling water over the lids or boil in a separate saucepan. Spread the hot salad in sterile jars and roll up with a seamer with sterile lids.

Turn hot jars upside down, wrap them in a warm blanket and leave in this position until they cool completely for about 12 hours. Then, turn the jars over and move them to a cool, dark place for storage. Serve the prepared salad.
