Beets with onions for the winter

Recently, I have gotten used to harvesting beets with onions for the winter, which is very convenient to use for subsequent cooking, for example, the same borscht or other interesting dishes. Beets and onions can also be used as a side dish or as an appetizer for hot dishes.

First, prepare all the ingredients you need.

Wash the beets and then boil or bake them in the oven. Place the washed beets in a large saucepan and cover with cold water. Put on fire and bring to a boil, reduce heat, cover and cook beets for about 1-1.5 hours. Cooking time depends on size, variety and quantity. Cool the boiled beets well, and then peel them.

Grate the peeled beets on a coarse grater or use a Korean carrot grater.

Peel the onions, rinse well in cold running water, and then cut into medium-sized cubes.

Pour a small amount of vegetable oil into a deep saucepan or skillet, heat the pan well over medium heat, and then add the prepared onions. Stirring occasionally, fry the onion until golden brown.

Place the grated beets in a deep saucepan.

In the next step, pour in the remaining amount of vegetable oil, add the required amount of granulated sugar, salt and ground pepper and pour in apple cider vinegar.

Stir the vegetable mixture thoroughly and place the saucepan with the contents over medium heat. Bring to a boil, then reduce heat and cook vegetables for about 15-20 minutes. In the meantime, prepare the jars, wash them thoroughly in warm water, and then sterilize in the oven, microwave, or water bath.

Spread the finished beetroot and onion appetizer in sterile jars and tighten with sterile lids. Turn hot jars upside down and wrap them in a warm blanket. Leave in this state for about 12 hours until it cools completely. Then store the jars in a cool, dark place.
