Beetroot without potatoes

A light and nutritious soup can be made with a minimum of ingredients. Try potato-free beetroot for your family dinner. The dish can be served both warm and cold.

Peel vegetables. Pass carrots and beets through a coarse grater. Chop the onion.

Preheat a frying pan with vegetable oil. We spread the vegetables, salt, pepper and simmer for 10 minutes. Then add tomato paste and keep on the stove for another 5 minutes.

Fill the soup blank with water or broth. Cook the beetroot over medium heat for 15 minutes. We try for salt and spices. Add if necessary. Remove from the stove and let it brew for 5-10 minutes.
