If you love first courses with beets, I suggest you cook a hot dietary beetroot without meat. The soup turns out to be quite aromatic, tasty and satisfying, despite the fact that it is lean and cooked in water.

Fill a pot of cold water, place over medium heat, bring to a boil. In the meantime, wash the beets thoroughly and peel them with a vegetable peeler. Then, dip the peeled beets in boiling water. Simmer the beets for about 45-60 minutes. The cooking time depends on the quantity and size of the beets.

When the beets are cooked, remove them from the pan and cool. Wash potatoes and carrots thoroughly and peel them with a vegetable peeler. Cut the potatoes into medium-sized cubes. Grate the carrots using a coarse grater. Peel the onions and garlic and chop finely. Place the potatoes in a saucepan.
