Beetroot in a slow cooker

As the name suggests, the main ingredient in this dish is beets. In the classic version, it is cooked and served chilled, but now you can find many different recipes for this soup. Otherwise, this is a bright, rich and healthy first course.

Beets, potatoes and carrots, wash, peel. Grate the beets and carrots on a coarse grater, cut the potatoes into small longitudinal pieces.

Pour a little sunflower oil into the multicooker bowl, put the beets, add sugar and vinegar, stir. Put on the "Soup" mode for 10-15 minutes.

Peel the onion, cut into thin half rings, chop the garlic with a press. Add grated carrots, onions and garlic to the beets in a slow cooker, stir and continue to simmer for 15-20 minutes.

Add potatoes to the multicooker bowl, pour the broth, salt and season to taste, add the herbs, mix. With the lid open, bring the soup to a boil, then close the lid and continue cooking for another 10-15 minutes.

Turn off the multicooker and do not open the lid for another 15-20 minutes. Pour the finished soup into bowls, you can use boiled eggs to decorate, season with sour cream and serve.
