Wash the meat, dry it, cut off the films and veins. Put bay leaf, peppercorns and salt into the water. Dip the meat into the brine and leave for 2 hours.

Peel the garlic and cut into small wedges.

In a bowl, combine honey, mustard, ground pepper, paprika and salt.
