Add cheese grated on a coarse grater to the dough: when frying, the surface of the cakes will brown well, and the crumb will contain melted cheese areas - very tasty. The sausage for the filling can be absolutely any, according to personal preferences. These cakes are especially good hot right after cooking. Cold products can be heated in the microwave: the crust will not be crispy, but soft and juicy.

Knead the dough. To do this, put the required amount of kefir in a bowl and add salt, granulated sugar and baking soda to it. Mix everything together with a whisk and leave for five to ten minutes so that the soda goes out.

Rub hard cheese on a coarse grater. Ready-made tortillas are especially juicy and tasty if you use cheese with a high percentage of fat. Pour the resulting shavings into kefir with soda, mix.

Then add flour in portions and knead the dough with a spoon. When the mass becomes difficult to interfere with the device, we go to work with our hands. Knead the dough with a soft but firm enough consistency. It shouldn't stick to your hands. Flour may require slightly more or less flour than indicated in the ingredients, depending on its moisture content and other specific characteristics.

We roll the kneaded dough into a ball, wrap it with cling film and leave it on the table to lie down for ten to fifteen minutes. After that, cut the dough into eight equal-sized pieces. We roll each part into a bun and roll it out with a rolling pin into a layer with an approximate thickness of two to three millimeters. To prevent the dough from sticking when rolling and easily move away from the working surface, lightly sprinkle it with flour.

To prepare the filling, peel the sausage and cut it into thin strips or small cubes. Place the chopped sausage in the center of each rolled flat cake.
