The cakes will turn out to be especially lush if the kefir is already stale. The closer it is to the end of the shelf life, the more acidic, and the more actively it will react with soda, which will give porosity to the cakes. Ham and cheese is a traditional combination that everyone likes. You can add any greens if desired. You can serve tortillas with sour cream, unsweetened yogurt, mayonnaise, tomato sauce.

Prepare the dough: pour kefir into a bowl, add granulated sugar, salt and soda, mix thoroughly with a whisk.

Sift the flour and pour it into a bowl with kefir, mix thoroughly with a whisk again so that there are no lumps left. It turns out a liquid homogeneous dough.

Rub the hard cheese on a coarse grater and pour the resulting shavings into the prepared dough. We mix.

Free the ham from the shell and chop finely with a knife. Add to the dough after the cheese, mix. Done, you can fry the cakes.

Heat a frying pan with a small amount of vegetable oil on the stove until hot.

Using a spoon or ladle, spread the dough with cheese and ham in hot oil. Align the dough to the bottom of the pan and form a cake of the desired size. We fry it for one and a half to two minutes at medium temperature. When the crust is browned from below, turn the cake over with a flat spatula and continue to fry for another couple of minutes until tender. Remove from the pan and transfer to a paper towel - this will remove the excess oil. We spread the next portion of the dough and fry the cakes further.
