"Very cheesy" flatbread with herbs! We not only put cheese in the filling, but also add it to the dough. Little secret: for the taste of cheese in such baked goods to be pronounced, multifaceted and rich, use several types of it. Each variety contains its own flavor notes, and together they complement each other well.

To prepare the dough, place warm kefir in a bowl. Pour salt, granulated sugar and baking soda into it. Mix thoroughly.

Grate hard cheese. Pour the cheese shavings into the kefir mass, mix.

Finally, we sift the flour and add it in parts to the liquid mass with cheese. We knead the dough first with a spoon, then with our hands.

The mass turns out to be soft, but elastic, keeping its shape well. The dough should not stick to your hands. We roll up a smooth ball, cover it with a towel and leave it in this position while we prepare the filling.

Any cheese can be used for the filling. You can use one type of it or mix different ones. For a rich taste, we recommend taking a piece of different varieties.

We rub the cheese on a coarse grater, pour it into a bowl. Wash the greens, dry them, chop them with a knife and pour them to the cheese. Season the mixture with ground black pepper. Rub everything together with a spoon - the filling is ready.

We spread the "rested" dough on a floured work surface and cut it into five equal-sized pieces. We roll each part into a bun. Then we roll out the portions of dough into thin round cakes. Put the prepared filling in the middle of each cake.

Raise the edges of the cake around the circumference and connect tightly over the filling.

We press the resulting workpiece with our hands and roll it out with a rolling pin to a thickness of four to five millimeters. Thus, we form the rest of the cakes.

Heat the frying pan on the stove until hot. Add some odorless vegetable oil. Put the formed tortillas in a frying pan one by one and fry them on both sides until golden brown. Top up with more oil as needed. Transfer the finished cakes from the pan to a paper towel. When the excess oil is absorbed, place the cakes on a plate. Serve hot.
