Such cakes are somewhat reminiscent of pies, but they cook faster and turn out to be denser. They are good for soup or broth, as well as in their own form in tea or coffee. We use chopped sausage as a filling. It goes well with cheese dough - it turns out rich, juicy and satisfying. You can also add any spices and herbs to your taste. After cooling, the tortillas can be reheated, but they are still most delicious right after frying, while they are fresh, soft and crispy.

To knead the dough, pour the specified amount of milk into a bowl and heat until warm. Add salt and granulated sugar, mix. Rub the hard cheese on a coarse grater and pour it into the milk. In a separate small container we extinguish the soda with vinegar, put the resulting mixture in a bowl after the cheese, mix. Finally, add the sifted flour and knead the dough. Its consistency shouldn't be steep. The dough should be quite soft, otherwise the cakes will be tough. Divide the resulting dough into several parts. We take into account how many cakes and what size need to be made and cut the dough accordingly. We roll up the balls from the portions of dough and cover them with a towel so that they do not dry out while we are preparing the filling.
Heat a frying pan with a small amount of odorless vegetable oil to a hot temperature on the stove. We spread the prepared tortillas and fry them until golden brown on both sides. The tortillas are fried quickly, literally two minutes on each side. Add large amounts of oil to the pan if necessary. Remove the finished cakes from the pan and transfer them to a paper towel so that it absorbs the excess oil after frying. After drying, place the cakes on a serving plate and serve them hot.
