Tkemali is a spicy Georgian sauce that is served with meat, fish or poultry. The sauce also goes well with grilled vegetables. Tkemali is made from cherry plum or sweet and sour plum. Try experimenting and find your perfect flavorful sauce recipe.

Rinse the cherry plum thoroughly under cold running water. Place in a deep saucepan with a thick bottom, mash a little with a potato grinder.

Place the pot over low heat. Bring to a boil and cook for about 20-25 minutes.

Wipe the cooked cherry plum through a fine sieve using a silicone spatula. Discard the seeds and skin.

Rinse the cilantro thoroughly under running water, shake off excess moisture. Peel the garlic. Wash hot peppers. Adjust the amount of hot pepper to your preference. Put the prepared ingredients in a blender bowl and bring to a homogeneous consistency.
