It is customary to prepare Tkemali from unripe or sour plums. The fruits, passed through a meat grinder, turn into a delicate and mouth-watering sauce. The original dressing can be served with meat or fish.

Sort the plums and rinse them, boil them in boiling water for 10 minutes. Then we cool and carefully take out the bones.

Chop sweet peppers and chili. We pass the boiled plums together with the pepper through a meat grinder.

Put the resulting gruel in a saucepan, add salt, sugar, spices and chopped garlic. Bring to a boil and simmer for 30 minutes. Stir the sauce constantly. After readiness, remove from the stove.
