Tkemali plum curry

This sauce is good for any meat dish. It has a sweet and sour taste with a curry aroma and a pungent garlic accent. Chili peppers can be used both fresh and dried. We store the prepared tkemali only in the refrigerator.

Sort out plums, discard defective fruits. We wash and dry the selected plums. Peel the garlic, rinse and dry.

Cut the plums in half and remove the seeds. Place the peeled plums in a saucepan or fireproof wide bowl.

Pour garlic, chopped into large pieces, on the plums. Extract the seeds from the chili. Cut the skin coarsely and also put it in a saucepan to the plums.

Pour salt, granulated sugar and curry into a saucepan.

Grind the ingredients with an immersion blender until an almost homogeneous mass is obtained. We put the container on the stove and bring to a boil. At a low temperature of the stove and occasional stirring, cook the tkemali for half an hour.

Pour the finished sauce into a clean dry jar, close the lid and let cool. Put the cooled sauce in the refrigerator for storage.
