Real Georgian tkemali is made from unripe sour plum or cherry plum. This sauce is ideal for fish, meat, poultry, as well as a side dish of potatoes. Tkemali can be prepared for the winter and delight your loved ones with an appetizing dressing all year round.

We choose unripe sour fruits. We wash them thoroughly and put them in a deep saucepan. Crush the contents until juice is formed.

We put a saucepan with crushed plums on the stove. Cook over low heat for 20 minutes.

After cooking, cool the plum and grind it through a sieve. We throw away the bones and skin, in the process they will separate themselves from the pulp we need.

Grind fresh herbs, spices, garlic and chili in a blender.

Put the plum puree on low heat again. Cook for 10 minutes.
