Tomato paste with basil for the winter

The preparation of such a sauce with basil can be called an express version of the classic tomato paste. It is prepared quickly, without prolonged boiling and rubbing through a sieve. Basil gives it an amazing aroma and interesting taste. Such tomato paste will definitely become indispensable in the preparation of spaghetti sauce, pizza and various meat dishes.

Wash the tomatoes thoroughly with running water. Make a cruciform incision on one side. We put the tomatoes in a deep container and fill them with boiling water so as to completely cover them. We soak the tomatoes for five minutes in hot water, after which we drain the liquid, and remove the skin from each fruit. Chop the peeled tomatoes until smooth. We use a meat grinder, submersible or stationary blender for this.

Peel the garlic, rinse and dry. We chop it finely with a knife or pass it through a press. Heat the specified amount of olive oil in a large frying pan and put chopped garlic in it. With stirring, bring it to a slightly golden color, then pour in the tomato mass and mix. Boil the sauce to the desired thickness. You can achieve a fairly thick consistency, or you can stop and leave the paste more liquid. Roughly, the boiling process will take twenty to thirty minutes.

Rinse and dry the fresh basil leaves. Grind them finely with a knife. Add chopped basil greens, dried basil, paprika, black pepper, salt and granulated sugar to the boiling tomato paste.

After adding the spices, boil the sauce for another ten minutes. After the specified time, pour in the vinegar, mix and remove the pan from the stove. I wash the jars and lids with a soda solution and sterilize in any convenient way. Put hot tomato paste in prepared dry jars and tighten with lids. Turn the seams upside down and wrap them in a blanket. Let the jars cool completely, after which we put them in a cool, dark place for storage.
