No-bake cookie cake with cottage cheese and gelatin

A wonderful dessert for a festive table can be prepared without an oven or exotic products. Biscuit cake with cottage cheese and gelatin will be your alternative to classic homemade baked goods.

First, soak the gelatin according to the instructions on the package. Grind the cookies into crumbs using a blender, meat grinder or just a rolling pin in a bag.

In the microwave or in a water bath, melt the butter, just do not boil it.

Pour the melted butter into the blender bowl to the cookie crumbs, add 2 tablespoons of sour cream and mix everything to get a viscous mass, but not liquid.

We spread the resulting mass in a split form, covered with a piece of cling film, and compact it with a spoon or hand. We put the cookie form in the refrigerator for a while.

Then grind the curd in a blender bowl. It can be rubbed through a sieve.

In a separate bowl, using a mixer, beat the sour cream with the addition of sugar. Add sugar to your liking. Beat until a souffle-like state.

Transfer the whipped sour cream to the chopped cottage cheese and stir. Pour the dissolved gelatin to the resulting mass. Do not add dry gelatin to the curd mass, as the cake will not solidify. Mix the cottage cheese with gelatin again.

Pour the curd mass into a mold for the liver and put it back in the refrigerator so that it freezes.

Defrost the frozen cherries (if not fresh) and remove the pits. Then put the berries in a saucepan, pour a glass of water to them, add sugar to your liking and cook over low heat for 10 minutes.

Then we take the cherries out of the syrup and lay them beautifully on top of the frozen curd crust.

Add gelatin to the cherry syrup in an amount according to the instructions and stir until completely dissolved. Gently pour the cherry syrup and gelatin over the top of the cake.

Put the cake in the refrigerator for another 30 minutes to freeze the cherry layer. Then we remove the form from the cake, transfer the dessert to a flat dish and serve.
