No-bake cookie cake with cottage cheese, sour cream and gelatin

This cake is a homemade cheesecake. It consists of a thin layer of crushed shortbread cookies and a thick layer of creamy mass prepared on the basis of cottage cheese, sour cream and gelatin. To make the curd layer soft and silky, a 1: 1 ratio of sour cream to curd is taken. Bananas and orange will be a fruity addition to the cake.

Grind the shortbread into crumbs using a blender or simply with a rolling pin in a bag.

Then pour cocoa powder to the resulting crumb and add butter at home temperature and mix everything well. Lining the detachable form with baking paper. Put about 2/3 of the resulting sand mass in a mold and tamp it a little. This will be our shortbread cake crust.

From the remaining mass, we form 6 small blanks with our hands. We put the form with shortbread and the blanks in the refrigerator for 15 minutes.

Soak gelatin in a small saucepan for 10 minutes, then stir it over low heat until it is completely dissolved. Put sour cream and cottage cheese in a deep bowl, add sugar to them and beat everything with a mixer or a whisk. Then pour the dissolved gelatin with a thin stream and mix the cream well.

Peel the bananas. We take out a shortcrust cake and blanks from the refrigerator. Apply the prepared sour cream and curd cream with a thin layer on the cake. Then we put three peeled bananas and shortbreads on the cake.

Pour the rest of the cream onto the cake and fruit so that it covers the bananas and the blanks completely. We put the cake pan in the freezer for 20 minutes. During this time and at low temperatures, gelatin will quickly set.

After this time, we take the cake out of the freezer. Cut the last banana into circles. Peel the orange and cut it into slices. Place the banana and orange slices beautifully on top of the cake.

Dilute a bag of jelly with hot water, as indicated on the package, and cool it slightly. Gently fill the cake with chilled jelly. Then we put the cake in the refrigerator overnight. We take the finished cake out of the mold, transfer it to a dish and serve it to the table.
