First of all, prepare all the necessary ingredients for making the Monastyrskaya izba cake from lavash.

Go ahead and prepare the cream. Put the required amount of fatty sour cream into a deep container. Using a mixer, beat the sour cream thoroughly until fluffy.

Gradually introduce the condensed boiled milk, continuing to beat the cream with a mixer at low speed.

While increasing the speed of the mixer, beat the cream thoroughly until a smooth, uniform consistency.

Divide the lavash sheet into several identical rectangular parts 10-12 centimeters wide.

Wash the cherries under water, then dry them and carefully remove the seeds using a special tool or a pin. If you are using frozen cherries like me, defrost them first and remove the pits. Put the prepared cherries in a row from a long pita bread. Gently form tight tubes.

Prepare the form in which you will collect the cake and cover it with cling film. Place a few tablespoons of the prepared cream on the bottom of the mold. Lay out the first row of straws.

Then add a few tablespoons of the cream again. Spread it evenly with a silicone spatula. Collect the cake by alternating the cream tubes. Spread the remaining cream over the cake using a silicone spatula. Tighten the cake with cling film and place in the refrigerator for 2-3 hours to soak.
