Each housewife chooses a recipe for making cottage cheese Easter to her taste, and you are offered another option - unbaked cottage cheese with lemon, nuts and spices, which will give this festive dish a special aroma and taste. She only needs fatty cottage cheese. The dish turns out to be very tender, we cook it using kitchen devices.

Fry the peeled walnuts in a dry skillet for 3-4 minutes. In a separate bowl, soak the raisins in boiling water for 10 minutes. We divide the eggs into whites and yolks. Then place the yolks in the mixer bowl, add the specified amount of sugar, chopped nutmeg and vanilla to them and beat until fluffy white foam. Then pour the chilled cream and beat with a mixer again.

Scald the lemon with boiling water, wash and rub the zest through a fine grater into the whipped mass. Then beat everything at maximum speed for 1 minute. We transfer the resulting mass to a separate dish, place it in a water bath and heat it up with continuous stirring for 5 minutes from the beginning of the boil. Then we remove it from the stove and leave it to cool.

Grind the fried nuts to a medium crumb state using a blender or rolling pin. Throw the soaked raisins on a sieve and dry them with napkins.

Then put fat cottage cheese in the mixer bowl, add to it the required amount of sour cream, butter softened at home temperature and mix these ingredients at maximum speed for 4 minutes and until smooth and tender. Then pour the already cooled creamy yolk mixture into the bowl to the curd and mix it still for 3-4 minutes.

Lastly, we shift the dried raisins and chopped nuts to this mass. Mix everything with a spoon so that the nuts and raisins are evenly distributed.

We cover the paste box with wet gauze folded in two layers. Then put the prepared curd mass into it compactly. Wrap the ends of the gauze inward. On top of Easter we put a flat plate and any load. We put a deep plate under the bowl, as the whey will drain. We put Easter under load for at least 6 hours in a cold place.
