Another interpretation of the classic recipe for cottage cheese Easter without heat treatment. This recipe subtly combines the taste of cottage cheese with the taste and aroma of citrus in Easter cottage cheese. And its delicate texture is perfectly complemented by raisins and chopped nuts.

Take a deep-bottomed saucepan. Place cottage cheese, sugar, sour cream, eggs in it and add a bag of vanillin. Mix all ingredients with a hand blender. For Easter, it's best to use homemade dairy products. From them, Easter is very dense and tasty. Add the zest of one orange to the curd mass. It is very convenient to rub it on a special fine grater. At the same time, be careful not to touch the white part of the orange peel, because it is bitter. Place the saucepan with the curd mass on the stove and, stirring constantly, heat over low heat. If you have a culinary thermometer, then while measuring the temperature of the curd mass, bring it to 80 ° C. If there is no thermometer, then wait until the mass becomes hot, but do not boil it.
Rinse the raisins and soak them in warm water for 5-10 minutes. Slice the nuts at this time. You can use any nuts you like. For example, walnuts, pecans, or hazelnuts are great. Discard the swollen raisins in a colander so that the glass water, and then blot with paper towels. Pour the prepared raisins and chopped nuts into the curd mass and stir.
Place the curd mass in a colander covered with gauze and cover it with the free ends of the gauze. Place a plate of a suitable size on top, on which place the weight. Usually, a regular liter can of water or a can with a roll is used. Put the resulting structure in the refrigerator and leave it there for a day. It is advisable to periodically drain the liquid that will collect in the pan.
