Easter cottage cheese with dried apricots

For Easter we use fresh cottage cheese, butter, powdered sugar and dried apricots. To make the curd mass more saturated, we weigh the curd in gauze in advance of cooking so that the excess whey is glass. We soak dried apricots in warm water in advance - it will not only become softer, but also more actively reveal its taste. Also add a little prunes for the fuller taste.

We choose cottage cheese with a fat content of 9-18%. We place it in cheesecloth. Folded in two layers, tie and put in a colander. We set a load on top, for example, a jar of water, and put it in the refrigerator for several hours so that the serum is glass.

Then we take the cottage cheese out of the gauze, put it in a bowl and punch it with a submersible blender. Alternatively, you can rub through a sieve or scroll through a meat grinder.

We wash dried apricots and prunes and soak in warm water for thirty to forty minutes, after which we place them on a towel so that the dried fruits dry from excess moisture. Cut the prepared dried apricots with prunes into small pieces. We leave a few pieces for decoration.

We take out the butter from the refrigerator in advance so that it has time to soften by the time of cooking. Put soft butter and icing sugar in a separate bowl. Beat with a mixer until smooth.

We spread the butter-sugar mass to the cottage cheese and mix thoroughly. Next, lay out the chopped dried fruits, mix.

The mass is ready, now we put it in a pasochny covered with gauze. We close it with the edges of the gauze and place the load on top. We place the completed form in a bowl so that excess serum can drain there. We put the structure in the refrigerator for twelve hours. After the specified time has elapsed, we remove the load, unfold the edges of the gauze. If the surface is uneven, trim it with a spatula. Gently flip the Easter cottage cheese onto a serving platter. We decorate the surface of Easter with pastry sprinkles and left-over dried fruits.
