We put cheesecloth folded in a couple of layers in a pasochny. We put the bowl in a flat plate so that the whey can drain into it. Fill with the prepared curd mass. Align the surface. Raise the edges of the gauze up and close the curd mass. On top we place some kind of load, for example, a can or a bottle of water. We remove the resulting structure in the refrigerator for ten to twelve hours - the curd mass should thicken, and the excess whey will drain into the plate.
