Cottage cheese casserole PP with banana

This casserole recipe is sugar-free and uses banana for sweetness. Instead of flour, semolina is added. A little orange combined with a banana gives the dish an exotic flavor. The casserole turns out to be tender and juicy, in no way inferior in taste to the traditional version.

Put cottage cheese and semolina in a wide bowl. Add sour cream and stir thoroughly until the components are completely mixed. The mixture should be left to infuse for thirty minutes so that the semolina can soften before baking.

While the curd-semolina mixture is infused, we divide the eggs into whites and yolks. Pour the proteins into a clean dry container and send them to the refrigerator, and add the yolks to the curd mixture.

The orange should be washed well with a soft brush. Thinly remove the zest with a special knife or fine grater. Carefully, only a superficial orange layer is needed, do not touch the white peel. Next, peel the orange, disassemble it into slices, remove the white film and veins, put the remaining pulp into the dough. Using an immersion blender, punch through the entire mass until completely homogeneous.

Peel the banana, cut into small pieces and add them to the dough. Alternatively, you can puree the banana with a blender along with the dough. If you add banana chunks, they will feel good in the finished casserole and give texture and flavor contrast.

We return to the deferred proteins. They should have cooled down well by now. Beat them with a mixer at high speed with a pinch of salt. You should get a dense, stable foam that forms peaks. We shift the protein mass into the dough with a spatula. Knead by hand with careful circular motions from top to bottom.

Grease the baking dish with a thin layer of oil. You can also line oiled parchment in the pan to make it easier to reach the casserole. We spread the dough into the prepared form and gently level the surface with a spoon.

We put the form with the future casserole on the middle level of the oven preheated to 180 degrees. We bake for forty minutes. During this time, the product will acquire a golden crust.

We take the finished casserole out of the oven and leave it on the table to cool completely right in the mold. When cooled down, it is not so fragile and can be served without spoiling its appearance. It is recommended to cut into portions with a sharp knife so as not to damage the cut with slices of banana. You can pour honey over if desired.
