Curd casserole with rice

Airy curd casserole with rice will not only amaze you with its great taste, but also delight the eye with its apple-caramel decoration. A successful combination of delicate cottage cheese, sweet apples and aromatic brown sugar will open up a new taste of casserole that you have not tried yet.

We wash rice under running water, put in a saucepan, fill with water 1: 2 and boil until fully cooked for 12-15 minutes. All the water should boil away. Then we leave it until it cools completely. If there is water in the rice, put it in a colander so that it is glass.

If the curd is granular, rub it through a sieve. Next, add yolks, cooled rice, salt, vanillin and half the sugar norm to the curd. Mix all ingredients well with a spoon.

Wash the apple, peel it, remove the core and cut it into wedges. Cover the form with baking paper, put apple slices on it and sprinkle with brown sugar (sugar may be regular, but brown gives a beautiful golden hue and a pleasant caramel aroma).

Place the egg whites in a clean deep bowl and use a mixer to beat at medium speed. After bubbles have appeared on the surface of the proteins, add sugar and turn on the speed to maximum. Whisk the whites until they reach steady peaks (about 4-6 minutes).

We introduce proteins to the curd mass. Gently mix the dough with movements from the bottom to the top, so as not to precipitate the whipped egg whites. We do not mix the dough for a long time - the splendor of our casserole depends on it. Carefully transfer our air mass into a mold on apples so that they do not "run away", level it with a spatula and put it in an oven preheated to 180 degrees for 40-45 minutes.

When ready, remove the casserole from the oven, let it cool slightly and turn the apple-caramel top out into a plate. Serve the casserole with sour cream, icing sugar or jam. Enjoy your tea!
