Cottage cheese casserole with rice and apples

You can make many interesting, tasty desserts from cottage cheese, most often these are all kinds of cottage cheese casseroles. Dried fruits, berries, fruits and other fillers are usually used for their filling. I propose to cook an unusual curd casserole with rice.

If you have ready-made rice, it will save you a little time. If there is no ready-made rice, cook it. Rinse the rice well several times under running water. Place in a saucepan and cover with water in a 1: 2.5 ratio. Salt. Bring rice to a boil and cook for 15 minutes. Cool the cooked rice.

Divide the chilled chicken eggs into whites and yolks. Put cottage cheese in a bowl and add egg yolks, boiled rice and vanilla sugar. Leave one tablespoon of sugar, and add half of the remaining granulated sugar to the curd mass. Mix everything thoroughly.

Rinse the apple well, peel and core, and cut into thin slices. Grease the prepared baking dish with a little oil or cover with parchment. Spread the left tablespoon of sugar evenly on the bottom, put the chopped apples on top.

Turn on the oven to preheat. Whisk the cooled egg whites at medium speed of the mixer, gradually adding granulated sugar and increasing the speed of the mixer until dense peaks are reached.

Into the curd dough gradually introduce the protein mass, gently stirring with movements from bottom to top. Do not stir for a long time so that the proteins do not fall off. Gently transfer the dough into a mold, flatten with a silicone spatula. Bake for 35 minutes in a well-preheated oven at 180 degrees.

Remove the casserole from the oven and let cool slightly. Transfer the cooked casserole to a platter so that the caramelized apples are on top.

Serve the finished casserole in portions, you can decorate with sour cream, jam or powdered sugar.
