Homemade cottage cheese is best for making casseroles, but if it is absent, do not despair. The main thing is that the cottage cheese is fatty, not liquid and not sour. If the curd is grainy, rub it through a sieve, so it will become airy and acquire the required consistency. In a deep bowl, mix together a little softened butter and sugar. The butter can be placed in the microwave for 10 seconds, it will soften a little. Using a whisk or fork, grind it to a homogeneous consistency.
