When guests are on the doorstep, and you urgently need to prepare a delicious dessert for tea, it is very useful to have recipes for simple and quick baking in stock. This recipe for curd muffins is one of those. The cooking process will become even faster and more convenient if you take a mixer. And the use of silicone molds will facilitate the extraction of ready-made products after baking. The taste and texture of these small muffins is best when they are completely cool. The crust will also harden slightly and create a pleasant contrast to the airy crumb.

We immediately take the butter out of the refrigerator so that by the time the dough is prepared, it has time to soften. We place it in a bowl and cover it with granulated sugar. Beat the butter mass with a mixer for a couple of minutes.

Add eggs to the sugar-oil mixture one at a time, thoroughly kneading the mass after each addition. Then we put the cottage cheese and with a mixer at low speed we mix it into the total mixture. You should get a pasty mass that looks like a cream. Pour the pre-sifted flour, baking powder and salt on top. Knead the dough using low mixer speed. The consistency of the finished dough is thick, viscous and plastic.

Silicone molds do not need to be greased before baking. Despite this, removing the finished products is absolutely not a hassle - you just need to bend the bottom and it is easy to get the cake out. Alternatively, paper capsules can be added to the molds - this will add aesthetics to the finished muffins. We lay out the prepared dough on the molds almost to the top - the dough will rise when baking in the shape of a hat.

Preheat the oven to a temperature of 180 degrees. We put the molds with the dough on the middle level of an already hot oven and bake the muffins for thirty minutes. At the end of the baking time, check the readiness of the dough with a toothpick by sticking it into the center of one of the muffins. If it comes out dry, the products can be taken out. We remove them hot from the molds and let them cool completely on the wire rack. Lightly sprinkle the muffins with powdered sugar before serving.
