Cottage cheese pancakes on kefir without eggs

It is not difficult to prepare cottage cheese pancakes on kefir without eggs for breakfast. They always turn out to be lush and tender, similar to cheesecakes, but with a different texture. In order for such pancakes to work out without adding eggs, kefir and cottage cheese must be warm. The pancakes keep their shape well and do not burn. Knead the dough with the addition of baking powder.

Ingredients

Cooking process

step 1 out of 6
Pour the amount of warm kefir indicated in the recipe into the bowl for kneading the dough, add sugar, a pinch of salt and vanillin to it to your liking. Stir the kefir with these ingredients with a whisk.
step 2 out of 6
Then transfer the cottage cheese to the kefir at room temperature. You can grind the cottage cheese on a sieve, you can mix it with a submersible blender, or you can mix it with a fork, then the curd lumps will be felt well in the pancakes.
step 3 out of 6
Mix the required amount of wheat flour with a baking powder and then pour it through a sieve into the kefir-curd mixture. Using a whisk, knead the dough until smooth. It should be like thick sour cream in consistency.
step 4 out of 6
Heat the oil well in a skillet. Using a spoon dipped in water or oil, spread the dough into a preheated skillet in the form of small pancakes.
step 5 out of 6
Fry the pancakes over medium heat until golden brown on both sides. If, when you press on the pancakes, they spring, then they are ready. Fry the pancakes with the lid on.
step 6 out of 6
Put the fried cottage cheese pancakes on kefir without eggs from the pan on paper napkins to remove excess oil, and then place on portioned plates and serve with honey, jam or sour cream.
Bon Appetit!
