For making a cake, 5% cottage cheese is best. It is not too greasy and has a sour taste. Today we are making a cupcake with raisins. Raisins can be replaced with any dried fruits (dried apricots, prunes), candied fruits or nuts, you just need to prepare the filling in advance: pour the dried fruits with boiling water and let stand for 10-15 minutes, then put in a colander and drain, peel the nuts and dry a little in a pan, then grind at your discretion.

In a deep bowl, mix cottage cheese, sugar and eggs, grind well with a spoon until smooth.
