Many do not want to bother with the dough and therefore do not bake cakes for Easter, but buy in the store. I always bake cakes myself according to the simplest recipe for me. And I want to share with you a delicious recipe for cottage cheese cake on soda.

Put the fatty homemade cottage cheese in a deep bowl, add the required amount of granulated sugar and mix thoroughly with an immersion blender. You should get a homogeneous curd mass.

Heat the milk slightly over low heat until warm. Melt the butter in the microwave or water bath. Combine the liquid ingredients in a bowl and mix thoroughly.

Sort out the raisins, rinse and dry. Prepare candied fruits.

Break the chicken eggs into a deep container and use a mixer to beat on medium speed until fluffy.

Wash the lemon thoroughly, cut off a quarter of the fruit and squeeze the lemon juice into a small container. Add one and a half teaspoon of baking soda. Stir.

Pour the beaten eggs, melted butter with milk, vanillin on the tip of a knife, baking soda quenched with lemon juice into the curd mass. Mix everything well with a hand blender. Sift the wheat flour through a sieve in several steps to the liquid ingredients, stirring well with a spoon. Add raisins and candied fruits and stir into the dough with your hands.

Grease the baking dishes thoroughly with a little butter or vegetable oil. Use muffin tins or special paper tins, as well as split tins for Easter cakes.

Divide the dough and fill the baking dish 2/3 of its height. Leave the cakes at room temperature for 20 minutes, covered with a clean, dry tea towel. In the meantime, turn on the oven to preheat. Set the temperature to 180 degrees.

Place the rested curd dough pieces on a baking sheet and place in a well-preheated oven. Bake for about 40-45 minutes. It may take less time, look at your oven.

Check the readiness of the cake with a wooden skewer and carefully remove it from the oven. Let cool slightly in the mold.

Then carefully remove from the mold and cool completely on a cutting board or wire rack, turning on its side.

Prepare the protein glaze. Whisk the icing sugar, lemon juice and chicken protein for about 5 minutes on medium mixer speed.

Decorate the frosting with confectionary sprinkles on top, if desired, and allow to solidify completely. I decorate Easter cakes in two ways. I only cover some of them with protein glaze, while others I decorate with various confectionery decorations.
