Sourdough curd cake

Easter is an important family holiday that gathers all members of a large family at a large table. The grandmother most often prepares curd cakes with sourdough. This process is not so much laborious as long. But the result pays off. For such cakes, it is not at all necessary to use icing.

Pour the milk preheated to a warm state into a deep bowl, add the mature starter culture with a moisture content of 100%, the required amount of granulated sugar and pre-sifted wheat flour. Stir well, tighten with cling film or cover, and leave in a warm place for about 10-12 hours.

Divide chicken eggs into yolks and whites. You only need chicken yolks to make the dough. Put the dough, soft cottage cheese, chicken yolks and whole wheat flour into the bowl of a stationary mixer. Stir until smooth on low speed and leave for 20-25 minutes.

Sort out the raisins, rinse and cover with boiling water. Leave to swell for about 15-20 minutes. Then drain the raisins through a sieve and let cool completely.

Stir the rested dough on a low mixer speed, add salt.

Add granulated sugar in several steps, continuing to mix with a mixer.

Add softened butter in portions, continuing to stir with a mixer.

Then add the swollen raisins and mix with a mixer.

Put the kneaded dough in a deep container and cover or tighten with cling film. The capacity should be several times larger, because the dough will increase in volume well. Leave the container at room temperature for 6-8 hours.

During this time, the dough will rise well.

Sprinkle flour on a clean work surface of the table and lay out the dough that has come up.

Divide the dough into pieces.

Prepare the molds in which you will bake the cakes. I most often take paper cakes, cakes in them look festively elegant.

Place the dough in a baking dish.

Cover with cling film or a bag to keep the dough from drying out and let sit. This may take about 6 hours.

Preheat the oven to 180 degrees. Place the cakes in the oven and bake for about 30 minutes. Take a look in your oven. Check the readiness of the cakes with a wooden skewer.
