Curd manna on kefir in the oven

The version of the manna with cottage cheese is prepared as simply as the usual one. But the taste of the finished baked goods is slightly different: the product turns out to be more juicy and rich. The baking powder and whipped proteins prevent the crumb from becoming too dense, but its texture still changes - delicate curd grains appear. The fat content of the cottage cheese can be any, although it is worth remembering that the fatter it is, the more tender and juicy the finished manna will be.

Divide the eggs into yolks and whites. Pour the proteins into a separate bowl and put them in the refrigerator for a few minutes to cool. Put yolks, granulated sugar, kefir and cottage cheese in a wide bowl. We rub the components with a spoon until mixing - it is not necessary to achieve uniformity yet. Pour semolina, vanillin and baking powder on top. Beat the mass with a mixer at medium speed for a minute until completely homogeneous. We leave the mixture for five to ten minutes to soften the semolina.

We take the proteins out of the refrigerator and beat them with a mixer at high speed until a stable foam is obtained. Mix the resulting foam in portions into the curd-semolina dough. Gently mix each portion with a spoon or spatula with movements from top to bottom.

Grease the baking dish with vegetable oil. If a silicone mold is used, then there is no need to lubricate it. Pour the prepared dough into a mold and put it on the middle level of the oven preheated to 190 degrees.

We bake the manna for fifty to sixty minutes. It will slightly increase in size and brownish crust. If you have doubts about the readiness of the manna, you can check it with a toothpick or wooden stick by sticking it into the center of the product. If the baking is ready, the stick will come out completely dry. We take the finished manna out of the oven and let it cool completely. Sprinkle the surface with powdered sugar, cut into portions and serve.
