Oven cottage cheese pie with apricots

Loose shortbread crust, delicate curd filling and juicy apricots - you just can't help but like a piece of such a pie. It is especially tasty when it cools down completely: the curd layer will thicken, apricots stabilize the pulp, and shortbread dough will show all the charm of its texture. To set off fresh apricots, we also suggest adding some dried apricots to the filling.
