The strawberry pie, garnished with jelly, takes on a particularly festive look: the glossy berries look very appetizing. The curd filling goes well with berries and a crumbly sandy base - this combination can already be called a classic. To prepare the filling, you can buy a ready-made jelly mixture - it is sold everywhere in any store.

To prepare shortcrust pastry, put the softened butter in a bowl, add granulated sugar, vanilla sugar, break an egg, mix thoroughly. Next, sift the flour along with the baking powder and pour it into the egg-oil mixture. Quickly knead the dough with your hands. The mass turns out to be soft, but keeping its shape well, it does not stick to the hands.

Grease the bottom and edges of a split baking dish with a small amount of odorless vegetable oil. If the mold is silicone, you don't need to lubricate it. We distribute the shortcrust pastry with our hands in shape, we make bumpers around the edges. The base for the cake is ready.

Next, we prepare the curd filling. Put the cottage cheese in a bowl, break the eggs, add granulated sugar, vanilla sugar, cornstarch and pour in the cream.

Using an immersion blender, punch through all the ingredients until a homogeneous mass is obtained and the sugar crystals are completely dissolved. Pour the prepared curd mass onto the sandy blank, level it with a spoon.

Preheat the oven to a temperature of 185 degrees. We put a form with a shortbread base and curd filling on the middle level of an already hot oven and bake for fifty to sixty minutes. By the end of baking, the filling will take on a golden creamy hue. We take the finished product out of the oven and let it cool completely.

We wash the strawberries in cool water, remove the sepals, dry the berries well on a towel from excess moisture. We lay the prepared berries on the surface of the cooled cake.

To prepare jelly, pour water in the specified amount into a saucepan, add granulated sugar and the contents of the jelly mixture bags. Mix everything with a whisk until smooth and bring to a boil. Cook over low heat for one minute. Remove the mixture from the stove and cool to a warm temperature.

Pour the jelly onto the surface of the cake - the mass will fill the voids between the strawberries and form an even transparent layer. We put the formed cake in the refrigerator for an hour to freeze the jelly.
