The first step is to prepare the pumpkin. To make the cupcakes tender and airy, you need to make mashed potatoes from the pumpkin. To do this, clean the pumpkin, take out the seeds and cut into small cubes.

Pour half a glass of water into a saucepan and put the pumpkin in it. Simmer covered over low heat for about 10 minutes.

The finished pumpkin must be chopped with a potato grinder or blender.

While the pumpkin puree is cooling, wash the lemon and raisins and soak in hot water (not boiling water) for 5 minutes. Then rub the lemon zest on a fine grater, and drain the water from the raisins.

Let's start the test. To do this, sift 140-160 g of flour, add cinnamon, vanillin, ground ginger, nutmeg, turmeric, baking powder, lemon zest and semolina. We mix everything.

Put the dough into molds. You can cook in one large one or divide into portions (if you bake in a metal or glass form, then it must be greased with butter and sprinkled with semolina, in a silicone form you can bake without greasing).

We bake the muffins for 25-30 minutes in an oven preheated to 180 °. When the dough rises and is browned, check the readiness with a wooden skewer.
