Pumpkin juice can be made without much effort at home, while, of course, you will have to spend quite a lot of time, but you will get an unforgettable pleasure from a home-made drink. I suggest making pumpkin juice with citric acid for the winter.

Wash a young, juicy, small pumpkin thoroughly, pat dry on a tea towel, and then peel with a vegetable peeler or a sharp knife. Then cut into several pieces and remove the core with the seeds using a tablespoon.

Cut the peeled pumpkin into approximately equal small pieces.

Put the prepared pumpkin in a deep saucepan with a thick bottom and cover with cold water so that it completely covers the vegetables. Put the pot with pumpkin over moderate heat and bring to a boil. Then reduce heat and cook vegetables for about 30 minutes.

Carefully remove the hot saucepan from the heat, drain the water in which the pumpkin was boiled, and use an immersion blender to grind the pumpkin until a smooth, uniform consistency.

Wash oranges and lemons thoroughly under running water using a vegetable and fruit brush. Then pour boiling water over them, pat dry with paper towels, use a fine grater to remove the zest without touching the white part. Then peel the fruit, cut it into several pieces, carefully remove the seeds and pass the pulp through a meat grinder.

Add chopped fruits, the required amount of granulated sugar and citric acid to the pumpkin puree. Mix thoroughly. Adjust the amount of granulated sugar in accordance with your taste preferences and depending on the natural sweetness of the ingredients.

Pour the required amount of drinking water into the resulting mass and mix well. Put the saucepan with the contents on moderate heat and bring to a boil. Prepare the jars. Wash them thoroughly in warm water and baking soda and then sterilize in a water bath, microwave or oven.

Pour the hot pumpkin juice with citric acid carefully into clean jars. Pour boiling water over the lids, and then roll up hot juice cans with a seamer. Turn the jars of vegetable juice upside down and wrap them in a blanket or towel. Leave in this position until it cools completely, and then move the juice cans for storage in a dark, cool place - in a closet or cellar.
