Wash the carcass thoroughly, pat dry with paper towels.

Brush the inside and outside of the duck with the salt and pepper mixture.

Combine the juice of half a lemon and an orange with soy sauce and honey.

Brush the duck with marinade on all sides, pour the remaining marinade on top. Leave it on for 5-6 hours, or even better overnight. Turn the carcass every 1-2 hours.

Cut half an orange and an apple into wedges.

Stuff the duck carcass with apple and orange wedges. Place the duck in your sleeve. Peel the potatoes, wash, cut into slices. Add the duck potatoes to the sleeve.
