Duck in pieces with buckwheat in the oven

Usually everyone bakes whole duck, with or without filling. However, the poultry is no less tasty if you bake it in pieces along with a side dish. For example, with buckwheat. For aroma and richness of taste, add mushrooms and onions. You can bake the dish both in one large form and in portioned pots.

Wash the duck carcass, dry it from excess moisture and cut it into small portions. Cut off excess fat. We put the pieces in a deep bowl.

Mix the soy sauce and tomato sauce in a separate container. Mix well until smooth. Pour the resulting mass into a bowl with pieces of duck and mix thoroughly so that the whole bird is greased with sauce. Leave the duck to marinate for thirty minutes at room temperature.

Heat a frying pan with a little vegetable oil on the stove. Put the duck pieces in the sauce in it and fry for a few minutes to set the crust. Then turn over all the pieces and fry for a few minutes on the other side. We close the lid and simmer for forty to forty five minutes at the lowest temperature. The fibers of the meat should soften.

While the duck is stewing, peel the onions. We wash it, dry it and cut it into small cubes.

Wipe the champignons with a damp cloth and cut into small pieces.

In a separate frying pan, heat some odorless vegetable oil and pour the onions into it. Fry with stirring until transparent. Then add the chopped champignons, mix and continue cooking for another fifteen minutes. at the end of cooking add salt and black pepper.

We wash buckwheat with running water. Pour raw washed cereals on the bottom of the mold or pots.

Put a fried mixture of onions and mushrooms on top. When laying, we leave a little free space on top, as buckwheat will increase in volume.
