Marinade with the addition of honey is great for duck meat. It adds a touch of sweetness and softens the fibers. For piquancy and aroma, we also add fresh grated ginger, garlic and orange juice. The base of the marinade is soy sauce. With this accompaniment, the duck pieces are very juicy, soft and fragrant. Mashed potatoes are ideal for garnish.

Cooking the marinade. Place the soy sauce in a bowl. Rinse the orange with hot water to extract more juice. Cut the citrus in half and squeeze out the juice. Pour it into a bowl of soy sauce. Heat the honey in the microwave to a liquid state and pour it into a bowl after the orange juice. We mix everything together.
We put the pieces of poultry in a bowl and fill it with the prepared marinade. Mix with your hands and grease each piece with a fragrant liquid. We close the bowl with the duck pieces with a lid or tighten with cling film and place in the refrigerator for four to five hours to marinate. Ideally, at night.
After marinating, place the duck pieces in a baking dish. Tighten the form with the shiny side down with foil. Press the edges tightly. Preheat the oven to 180 degrees in advance. We bake for one and a half hours. After the specified time, remove the foil and brown the duck pieces for another fifteen to twenty minutes.
