Place the duck on a wire rack in a deep baking sheet. Pour a glass of water into a baking sheet, cover the duck with foil. Place the resulting structure in an oven preheated to 180 degrees for 80 minutes. Then remove the foil, grease the duck with the released juice and bake the duck for another 40-50 minutes. Next, increase the temperature to 220 degrees, grease the duck skin with a mixture of honey and juice, cook for 20-25 minutes until golden brown.
