Duck with oranges in foil in the oven

Oranges and baked duck are traditional attributes of the New Year's table. We would like to share with you a great recipe for duck stuffed with oranges, baked in foil in the oven.

Ingredients

Cooking process

step 1 out of 5
Wash the duck, cut off excess fat, make punctures on the skin with a fork.
step 2 out of 5
Grate the zest of one orange, then squeeze the juice out of it. Peel the garlic and pass through a press, grind pepper and salt in a mortar. Brush the carcass with orange juice and a mixture of garlic and zest, wrap in plastic wrap and leave to marinate in the refrigerator for 8 hours.
step 3 out of 5
Cut the second orange into wedges. Put orange slices and cinnamon inside the duck, chop off the belly with toothpicks.
step 4 out of 5
Place the duck on a wire rack in a deep baking sheet. Pour a glass of water into a baking sheet, cover the duck with foil. Place the resulting structure in an oven preheated to 180 degrees for 80 minutes. Then remove the foil, grease the duck with the released juice and bake the duck for another 40-50 minutes. Next, increase the temperature to 220 degrees, grease the duck skin with a mixture of honey and juice, cook for 20-25 minutes until golden brown.
step 5 out of 5
Remove the oranges from the duck before serving.

Bon Appetit!
