Duck with rice and prunes in the oven

A very tasty dish with sweet notes. Duck is stuffed with rice and prunes - a non-trivial combination that ultimately gives an excellent result.

Soak the rice for half an hour, then drain and rinse it several times. Put the rice to simmer, slightly not bringing it to readiness, turn off the heat and rinse.

Pour the prunes with boiling water for 10-15 minutes, then rinse and cut. Combine rice and prunes.

Rinse the duck thoroughly inside and out, dry with paper towels. Rub the carcass with a mixture of salt and ground pepper inside and out.

Stuff the duck with the rice and prune mixture. Secure the edges of the abdomen with toothpicks.

Wrap the duck in foil and place in an oven preheated to 190 degrees for 3.5 hours. Then unfold the foil, remove the melted fat and let the duck brown for another half hour at 170 degrees. Duck with rice and prunes is ready.
